Order our box of fall roasts and ground beef

From the Ranch
Cool nights are here. Start with the Beef Essentials Bundle from Hadrick Ranch — roasts and ground beef ready for the freezer.
Nights have turned cooler here in Faulkton and we have been running the lights a little longer in the shop. The weaned calves are settled into the backgrounding yard and the cows are back on pasture. This is the time of year when we start thinking about slower meals that cook while we finish the day’s work. A roast in the oven or a pot of chili made with ground beef covers supper for the family without much fuss once the weather drops.
The first box
If you have not ordered from Hadrick Ranch yet, the Beef Essentials Bundle is the simplest way to start. It is roughly 20 pounds of the cuts that work well when the weather cools: roasts, ground beef, canoe-cut marrow bones, and steaks. The price is $278 with free shipping anywhere in the U.S. via UPS. We ship Monday. Ranch pickup is discounted if you are close enough to stop by.
Cut of the issue
This issue we are focusing on ground beef and roasts because they fit the cooler fall weather. Our ground beef is a restaurant-style blend that holds together for burgers, meatballs, or chili. The roasts are cut so they work for the oven or slow cooker. Season with salt and pepper, sear if you like, then cook low and slow until the meat pulls apart.
How we raise it
Our Black Angus cattle spend their first summer on pasture with their mothers in Faulk County. After weaning they move into a small backgrounding yard. When they enter the finishing phase we feed them locally raised cracked corn and free choice hay. The ration is built so the high-marbling genetics we select can express themselves. Every animal that goes into a box is federally inspected at The Meathouse. Hadrick Ranch is the first South Dakota ranching family in the Certified Angus Beef Ranch-to-Table program.
Where to taste it first
If you want to try the beef before you buy a box, stop into Minerva’s Downtown in Sioux Falls. They have featured Hadrick Ranch beef for years and their chefs know how to handle both ground beef and larger cuts.
At our table
Simple fall pot roast (crock pot)
Season a 3-pound Hadrick Ranch roast with salt and pepper. Place it in a crock pot with onion, carrots, and enough broth or water to come about halfway up the meat. Cover and cook on low for 7 to 8 hours until fork-tender. Serves 6.
If you already have a box
If you already have Hadrick Ranch beef in the freezer, pull a roast or a package of ground beef this week and put it to work for a slow meal. The same genetics and finishing that go into the Essentials Bundle are in every package we send.
We ship Monday via UPS. Free shipping on orders across the U.S.
